What is this?!
This was a pretty stupid accident. Apparently arugala tastes pretty good sauteed in mirin! Here's the move: you are going to add some stuff to the pan, leech out some flavor in mirin, and then at the end drop in some washed arugala and then quickly pull it out before it gets too stringy and squishy.
Great alongside a tofu scramble, on top of a bowl of beans, inside a sandwich or on a bed of rice with kimchee and mushrooms or all by itself. The mirin is a great alternative to oil and if you buy nicer mirin you get great smoky sweet salty earthy notes for free.
Ingredients:
- 1 package of arugula salad i like to use scissors to chop the leaves down one cut
- half an onion
- a shit ton of garlic
- mirin rice vinegar
- other stuff like this
- olive oil that is not crap
Here is what you do:
- sautee the onion in a tiny bit of olive oil until it they start to turn the corner to carmely
- dribble some mirin into the pan, maybe 2 or 3 splashes
- let the onion soak up some of the mirin (maybe 15 seconds) and then toss chopped garlic in
- add a splash of olive oil in and let the onion garlic mix hang out and release their goodies
- splash some more mirin into the mix after the garlic and onion have gotten a tiny bit brown
time for arugula!
- turn the heat down initially.
- the arugula cooks fast. its easy to go too far, which makes it too chewy.
- you want to throw the bag of salad in and mix fast so that the arugula starts to get tipsy
- as soon as it curls and is nice and soaked kill the heat and toss it into a bowl and eat!
